How to make: banana and oat pancakes

Can we all just take a moment to appreciate pancakes. ... My goodness. Pancakes are absolutely delicious and are great for bringing everyone together on a lazy morning. THIS recipe is a new spin on your classic pancakes - they are healthy and suitable for vegetarians /vegans, if you were to substitute the milk for almond milk. Most of all, they are SO SCRUMPTIOUS. Made with banana and oats, they are thick, filling and overall absolutely amazing! Read on to find out more...


1 cup of oats ​¾ of a cup of milk 2 bananas A teaspoon of cinnamon A teaspoon of vanilla essence A teaspoon of honey ​¼ of a teaspoon of salt 1 and a half teaspoons of baking powder ​A lob of butter / coconut oil (I would say that this mix makes about 6 medium sized pancakes; it does depend on how big or small they are really. They are thicker than average and quite filling as I said, so think about that when you are deciding how much mixture to make.) Quite simply, you want to stick all the ingredients in a blender and blend until smooth. It's normal to get the odd lob of banana so don't worry about that! Warning: the mixture is almost as scrumptious as the pancakes so beware of wandering fingers nearby!

I used butter on my pan as I didn't have any coconut oil but obviously the latter is the healthier alternative. Heat up the pan and make the first pancake a little one, as the first is never amazing!

Once you're good to go, make as many pancakes as you see fit! A good thing to do is to put the first few pancakes in the oven to keep them warm while you are making more. Another thing is that these pancakes do take quite a while to cook as they are pretty thick, so undercooking is quite common. Have patience and you will get there! I had five with a dollop of honey on top and just managed to eat all of them before collapsing in a satisfied heap.
